1 cup rolled oats
1/2 cup teff flour (available in health food stores or African grocers)
1/4 cup whole wheat flour
2 tbsp ground flax
2 tbsp maca powder (available at health food stores)
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup brown sugar
2 tbsp white sugar
1/4 cup butter or coconut oil
1 egg (or to make vegan: whisk 1 tbsp flax with 3 tbsp water)
1 tsp vanilla
1/2 cup unsweetened coconut
1/2 cup semi-sweet chocolate chips or raw cacao nibs
Directions:
In a medium bowl, whisk together all the dry ingredients (oats through salt) and set aside.
Using a hand or stand mixer, cream together the butter and sugar. Add the egg and vanilla to the butter-sugar mixture. Gently combine the wet and dry ingredients. Stir in the coconut and chocolate chips. Drop rounded spoonfuls of dough onto a parchment-lined baking sheet. Bake cookies for about 10 minutes at 350 degrees.
