2 cups rolled oats
1 cup puffed quinoa
1/2 cup raw sunflower seeds
1 cup sliced raw almonds
1/2 cup walnuts
1/2 cup agave
1/4 cup raw coconut oil
11/2 teaspoons natural vanilla extract
1/2 teaspoon sea salt
1/4 cup chopped dried fruit, any combination you like (unsweetened)
Directions:
Preheat the oven to 300 degrees F. In a bowl mix together the oats, quinoa, sunflower seeds, almonds, walnuts and dried fruit. Combine the agave, coconut oil, salt and extract in a medium saucepan and place over low heat. Cook until the mixture becomes liquid. Immediately add liquid mixture to the bowl of dry ingredients and stir to combine. Turn mixture out into a prepared 8-inch baking dish and press down, evenly distributing the mixture in the dish (grease with a little coconut oil) and place in the oven to bake for 20-25 minutes. Remove from the oven and allow to cool completely. Cut into squares and store in an airtight container for up to a week.
